Bon Appetit!
Every summer the company I work for hires a few summer interns. They are usually law students from the local colleges with egos only slightly larger than their student loans. I find these young men and women interesting, if not always amusing. This year, I was pleasantly surprised to welcome a young woman from Belgium with French and German ancestry. These are recipes she graciously offered to share with us. I can only say, Well met, Anva, and may our paths cross again.
Côte de Boeuf a la Bor Delaise
1 Flank Steak Heat oven to 350 degrees Season the steak with salt and pepper, massaging the spices into the meat. Pan sear the steak after melting the butter into a heated frying pan. In a lidded glass casserole dish mix the shallots, wine, and cognac with a bit each of the salt, pepper, thyme, parsley and bay leaves. Once the meat is browned on the outside add this to the casserole dish along with about two tablespoons of the juices left in the frying pan. Place into the oven for 25 to 30 minutes. Remove the meat from the casserole dish and allow to sit for about 5 minutes.Thicken the juices with a tablespoon of finely sifted flower to create the gravy. Slice the meat on an angle and serve.
Pommes de Terre
2 Large white potatoes Scrub potatoes well with a brush. Slice longways. Coat the meat of the potato with olive oil and then press into sesame seeds coating only the exposed meat . Lay sesame seed side down in a glass pan. Brush the tops of the potatoes lightly with the olive oil and sprinkle with garlic salt. Bake at 350 degrees for 40 to 45 minutes depending on the size of your potatoes. Haricots Vertes
String Beans Boil the string beans just enough to soften slightly. Stir fry the mushrooms and onions in a dab of butter until slightly softened. Place the beans, mushrooms and onions in a glass dish mixing in butter and garlic powder. Bake at 350 degrees for 15 minutes.
